Creamy Italian Chicken Pasta

So I decide to do something I don't do often... are you ready?....I know you are scared as to what I could be talking about... it is quite shocking really..... I pulled out my Crock pot! gasp I know! Don't get me wrong they are fabulous inventions, and very nice when used... however, it's the whole remembering to pull it out and use it BEFORE it is an hour till dinner that gets me EVERY time! Well I did it the other day adn the result was quite nice! So here you go...

Creamy Itailian Chicken

4 lg. frozen chicken breast
1 T minced garlic
1 pkg cream cheese (8oz)
1 can cream of Chicken soup
1 cup water
2 pkgs Italian dressing seasoning mix
1/2 cup parmesan cheese
salt and pepper to taste

1 box penne(or shape of choice) pasta cooked Al dente

Throw frozen chicken, garlic, cream cheese, soup, seasonings, water and cheese into crock pot. Cook on low for four hours. Season with salt and pepper and toss with pasta. Devour...

Tuscany White Bean and Chicken Pasta

This was our dinner last night and super easy and tasty

3 Boneless skinless chicken breast
2 cloves garlic, minced
1 squeeze anchovy paste (you may think you don't like anchovies but really you do...the paste is great cause then you don't have to touch  them)
1/2 onion diced
1 can fire roasted tomatoes
1 can white beans
1 pkg penne pasta
3 T prepared pesto
Salt and pepper to taste
Parmesan cheese

Season the chicken with salt and pepper and saute in some olive oil till cooked, remove from pan and let rest. Add the onions and garlic and anchovy paste to the pan, cook till soft and paste is melted. Add tomatoes and beans and pesto. Meanwhile cook pasta till al dente. Slice chicken and add to the beans and tomatoes. Season to taste. Add pasta and toss well, add Parmesan cheese and serve with crusty bread.

Sundried Tomato Pesto Pasta

It has been SO hot lately I dread cooking, I now strange huh? Normally I love it and Look forward to making dinner...perhaps it is my growing belly that is making me miserably hot or the fact that my house doesn't cool off the way I would like it to...whatever it is my inspiration to cook has vanished. Plus the summer is supposed to be full of BBQ dinners...our BBQ isn't working. I think something must have gotten disconnected in the move because I can't get it hotter than 200`...alas the minimal cooking dinners.
I really didn't want the oven on so I decided to make a pasta dish and it was SO yummy!  Here is the recipe and let me tell you it is a GOOD ONE!

4 boneless skinless Chicken breast
2 T minced garlic divided
1/2 cup sundried tomatoes
bunch of fresh basil + 1 T fresh basil minced
3 T olive oil
1/4 onion
1/3 cup parmesan cheese
salt and pepper to taste
1 box penne pasta, cooked al dente

Heat a bit of oil in a saute pan and add the garlic and 1 T basil, add the chicken and cook till complete. Set aside.
In a food processor or blender make the pesto. Add the tomatoes, bunch of basil, remaing garlic, onion, cheese and oil. Blend well, if too dry add more oil if too wet you can add more tomato, basil or onion. Season with salt and pepper. Slice the chicken breast, and add to the hot cooked pasta. Add pesto and toss well. Toss with a bit more cheese if liked and serve hot.
Simple easy and so good!

Homemade Mac and Cheese

Who can so no to a comforting bowl of ooey gooey homemade macaroni and cheese, especially when there is bacon! One of my good friends, blogged about how she was craving some stick to your bones homemade mac and cheese so a midnight she started making it, and it was horrible. After reading her post I wanted mac and cheese so bad I decided to make it for dinner tonight and I'm making enough for her and her family so her craving can be satisfied as well!  It's a classic and a good one!

1 lb bacon, diced and fried
1 T bacon grease
7 T butter
3/4 cup flour
1/3 Cup cream cheese
5 cups milk
2 lbs cheddar cheese grated
1/2 medium onion with core still attached
1/2 tsp garlic powder
1 tsp ground mustard
salt and pepper to taste
1 large bag elbow macaroni

Add the bacon grease and butter to a pan and melt, add flour to make your rue. Cook for about 3 minutes, add about a cup of milk and mix well with the rue. Add Remaining milk and seasonings. Add the onion and a bring to a boil. Cook for a few minutes so that the rue is thickened. Reduce heat to a simmer and add the cheese in small amounts so that it melts completely. Meanwhile cook the macaroni till al dente`. Add the cheese sauce to the noodles and toss well, add the bacon and place in a baking dish. Top with either more grated cheese or bread crumbs or even crushed potato chips, or leave it plain. Bake for about 15 minutes so that it gets crispy. Serve hot.

Peanut Thai Noodles

Alright so this recipe is still a work in progress. I looked on line and got a few ideas but ran with it on my own and it still needs some tweeking, to be where I really like it. Everyone else seemed to enjoy it though...

1 pkg spaghetti noodles cooked al dente
1/2 cup peanut butter
2 T garlic
1/2 of an onion
1 green chile sliced
1/3 cup soy sauce
3 T oyster sauce or fish sauce would work too.
1 tsp ground ginger
1 T rice wine vinegar
1 1/2 cups chicken stock
1 tsp cayenne pepper
1 tsp red pepper flakes
carrots julienned
chicken strips (I had left over roasted chicken so I used that)
shrimp
other veggies and proteins what ever you perfer.

Saute the garlic and onion and chile in a bit of oil add the stock, vinegar, peanut butter, soy, oyster sauce, ginger and cayenne and flakes. Cook till melted and smooth. Adjust the heat as you perfer by adding more cayenne. Sir fry the chicken, carrots and other items and add the cooked spaghetti, toss with the sauce and serve with chopped peanuts, lime juice and Sriracha.

Overall it was tasty but I need to play around with it some more until I can consider it one of my favorites!

Chicken Pesto Pasta

On my trip to Vegas my friend Kari made this for me, which for Kari is a big deal. Growing up she was never much of a cook, but now that she married she has grown emensly in that department! I liked it enough that I'm adding it to my blog and tweeking it just a bit.

1/2 cup prepared pesto
1/4 water
1 onion diced
1 tsp garlic, minced
2 tomatoes, diced
3 chicken breast
1 tsp parsley
salt and pepper to taste
1 pkg penne pasta
1/4 cup Romano cheese, grated

Start the pasta and cook till al dente. set aside. In a saute pan, add a bit of olive oil and saute the garlic and onions. Carmelize slightly, add the chicken breast with the parsley and salt and pepper. allow chicken to get golden brown and cooked through. In a smaller pan heat the pesto and the water to make a thin sauce. When the chicken is completely cooked, shred with forks add to the pasta, add the tomatoes and then the thin pesto sauce. Toss till coated and serve hot top with Romano cheese. Serve with rolls and a salad.
